Crispy Chicken and Cheese Pillows

Crispy Chicken and Cheese Pillows? Love at the first bite.

INGREDIENTS:

1 chicken breast

Olive oil

1 tbsp. parsley

1 tbsp. thyme

1 tbsp. oregano

Salt

Pepper

Croissant dough

Grated mozzarella

3 cups of flour

3 eggs

2 cups seasoned breadcrumbs

INSTRUCTIONS

  1. In a bowl, place the chicken breast, the dried parsley, the dried thyme, the dried oregano, the salt, the pepper and the olive oil and stir to combine. Place the chicken in a pan and cook on both sides until the internal temperature reaches 165º. Once cooked, remove the chicken from the pan and let it cool.
  2. Using the croissant dough, form a rectangle. Place the dough with cheese and a piece of chicken on one side. Add another layer of cheese over the chicken and fold over the remaining dough so that it is pillow-shaped. Crush the edges of the dough with a fork.
  3. Pass the pillow through flour and egg and finally through the seasoned breadcrumbs.
  4. Fry in oil and remove when crispy.
  5. Let cool slightly before serving. Serve together with marinara sauce to accompany.
