Crispy Chicken and Cheese Pillows? Love at the first bite.
INGREDIENTS:
1 chicken breast
Olive oil
1 tbsp. parsley
1 tbsp. thyme
1 tbsp. oregano
Salt
Pepper
Croissant dough
Grated mozzarella
3 cups of flour
3 eggs
2 cups seasoned breadcrumbs
INSTRUCTIONS
- In a bowl, place the chicken breast, the dried parsley, the dried thyme, the dried oregano, the salt, the pepper and the olive oil and stir to combine. Place the chicken in a pan and cook on both sides until the internal temperature reaches 165º. Once cooked, remove the chicken from the pan and let it cool.
- Using the croissant dough, form a rectangle. Place the dough with cheese and a piece of chicken on one side. Add another layer of cheese over the chicken and fold over the remaining dough so that it is pillow-shaped. Crush the edges of the dough with a fork.
- Pass the pillow through flour and egg and finally through the seasoned breadcrumbs.
- Fry in oil and remove when crispy.
- Let cool slightly before serving. Serve together with marinara sauce to accompany.
